Sausage, Sauerkraut, and Potatoes
INGREDIENTS:
1 lb smoked sausage, sliced
1 lb sauerkraut, drained and rinsed
1 lb potatoes, peeled and diced
1 onion, chopped
2 cloves garlic, minced
2 tbsp olive oil
Salt and pepper to taste
Fresh parsley for garnish (optional)
DIRECTIONS:
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened and fragrant.
Add sliced sausage to the skillet and cook until lightly browned on both sides.
