Fresh Avocado Chicken Salad
Taking traditional recipes and adding a new twist offers you foods that are healthier and adjustable to your taste. INGREDIENTS:
2 C. Chopped grilled chicken
2 Large ripe avocados
1 C. Corn kernels
½ C. Green onion chopped
1 C. Bacon crumbles
1 Tbsp. Fresh chopped dill
2 Tbsp. Fresh chopped parsley
¼ tsp. Ground mustard
2 Tbsp. Lemon juice
2 Tbsp. Olive oil
Salt and pepper to taste
DIRECTIONS:
Prep the vegetables, herbs and chicken.
Cut the avocados in half lengthwise, remove the pit in the center, and use a spoon to scoop the inside out of each avocado half. Chop the avocado, and set aside the empty shells.
In a large mixing bowl, combine the chicken, chopped avocado, corn, green onion, bacon crumbles, dill and parsley.
