Peanut Butter and Jelly Cookies

INGREDIENTS:
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup butter-flavored shortening
1 cup creamy peanut butter
1 cup dark brown sugar
1/3 cup granulated sugar
3 tablespoons milk
1 teaspoon vanilla extract
1 large egg
1/2 cup jelly
1/2 cup creamy peanut butter
DIRECTIONS:
Adjust the oven racks to the upper- and lower-middle positions and heat the oven to 375 degrees F. Line 2 large baking sheets with parchment paper.
In a medium bowl, whisk the flour, baking soda, and salt; set aside.
In the bowl of a stand mixer with the flat beater attached, cream the shortening, peanut butter, brown sugar, granulated sugar, at medium speed until light and fluffy, about 1 minute. Scrape down the sides of the bowl with a rubber spatula as needed. Add the milk, vanilla and egg; beat at medium speed until combined, about 30 seconds.
