CHICKEN LO MEIN

INGREDIENTS:

8 oz lo mein noodles or spaghetti
2 boneless, skinless chicken breasts, thinly sliced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
1 teaspoon sesame oil
2 tablespoons vegetable oil, divided
2 cloves garlic, minced
1 teaspoon ginger, minced
1 bell pepper, thinly sliced
1 cup sliced mushrooms
1 cup shredded cabbage
1 carrot, julienned
2 green onions, chopped
Salt and pepper, to taste
Sesame seeds and chopped cilantro, for garnish (optional)

DIRECTIONS:

Cook the Noodles: Bring a pot of water to a boil and cook the lo mein noodles according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Marinate the Chicken: In a small bowl, combine the sliced chicken breast with soy sauce, oyster sauce, hoisin sauce, and sesame oil. Let it marinate for at least 15 minutes to allow the flavors to infuse.

Stir-Fry the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for 3-4 minutes, or until cooked through. Remove the chicken from the skillet and set aside.

Prepare the Vegetables: In the same skillet, heat the remaining tablespoon of vegetable oil. Add minced garlic and ginger, and stir-fry for 1 minute until fragrant.
